 Hi everyone! I am so excited to be a part of the Pink Elephant Design Team!!  I am married with 2 teen-aged kids (16 and 14) and live on a farm in central Alberta, CANADA.  My crafty journey started wayyyy back (13+ years) when I hosted a Stampin' Up! demonstration. That was all it took. I was a demonstrator up until about 3 years ago then retired from Stampin’ Up to broaden my horizons with other companies and products. I love the world of paper, ink, Copics and stamps and love to play along with challenges. I am so happy to share my excitement and love of paper crafting with you and look forward to making new friendships along the way!



Nance Salkeld, Soul Stampin' Designs

My name is Nance Salkeld and I am truly thrilled to be part of the design team at The Pink Elephant for the next four months and mixing it up with Ella and her team!   So, who am I?  I am an empty nest mom of 2 college men, Patrick (21 and at UCO) and Ben (19 and at UNC), one beautiful daughter inlaw, Helen, 2 canine fur babies, Cricket & Riley, and 1 grandkitty, Desmond.  I have been married to my wonderful ER RN husband, Dave, for 23 years.  We met at George Mason University where I got a psych degree.  I was a SAHM and now am a SAHW (stay at home wife).  We have resided in Cary, North Carolina (Go HEELS!) for the past 10 years and love it --- 2 hours from the beach and 2 hours from the mountains!  Art and crafting have always been a part of me since I was little.  I took oil painting lessons as a teen and photography classes.  I have a photoblog as well as my card making blog (see my blog for links).   I started scrapbooking in 1999 and added stamping/card making in 2007 and have been obsessed since then.  My hubs helped me take over our oldest son's former bedroom as a craft room so I can create til my heart's content and maybe even make a little mad money at it too.  I also do a lot of DIY decorating, furniture and home improvement.  In fact, we spent our 15th wedding anniversary week drywalling our family room by ourselves and stayed married! If that doesn't say "love" I don't know what does!  My other passions are my family, Tarheel sporting events, the beach, tooling around the Triangle and NC, traveling with the Hubs, and daydreaming of a summer home near Boston.  Oh, did I mention I am a HUGE, passionate New England Patriots fan much to the dismay of my avid Lions fan husband?!  I am looking forward to all of the weekly fun and creation going on at The Pink Elephant, working with the other design team members and making lots of new crafty friends!  Let's get crafty!

Project Thursday: {HALLOWEEN} White Chocolate Peanut Butter Bars

Every Year we try to include a Sweet Treat in our Neighborhood Boo Bags.

 One of our favorites - that I make way too often - is Home Made Peanut Butter Bars. 

I wanted the Boo Bag Treats to look Halloweenish, so I changed the recipe to make it more colorful.

 

White Chocolate Peanut Butter Bars

INGREDIENTS

20 Halloween Oreo Cookies
1/4 Cup Melted Butter

1   Cup Butter
 1 1/2   Cup Creamy Peanut Butter
2   Cups Graham Cracker Crumbs
2   Cups Confectioners Sugar
1/2   Cup Chocolate Chips
1 1/2   Cup White Chocolate Chips
2   Tablespoons Shortening

DIRECTIONS

1.  Melt 1/4 cup butter in medium bowl.  Crush Oreo Cookies (using a food processor) into small crumbs.  Add to melted butter and stir until well coated. 

2.  Spread cookie crumb mixture onto bottom of 9 X 13 pan and refrigerate until firm.

3.  Melt 1 cup butter and peanut butter in large bowl in microwave - stirring frequently until smooth. 

4.  Add graham cracker crumbs and confectioners sugar to melted mixture and stir until well combined.  Set aside.

5.  Melt chocolate chips in microwave until smooth.

6.  Spread melted chocolate over cookie crust (this helps keep the cookie crumbs together and adhere them to the peanut butter layer).

7.  Spread peanut butter mixture evenly over cookie/chocolate crust and refrigerate until set.

8.  Melt white chocolate chips and shortening in microwave - stirring frequently until smooth.

9.  Spread over peanut butter mixture.

10.  Sprinkle with festive Halloween non-pareils, jimmies or quins.

11.  Refrigerate until firm - at least one hour.  Cut into squares.


I was very excited to use Halloween Oreo cookies for the crust.  I expected it to look like black and orange speckles once they were crushed.


 That's not exactly how it turned out.  They ended up looking plain black once they were mixed together, but it still worked fine. 



 When you are mixing together the sugar, peanut butter, graham crumbs and butter - it seems like the mixture will never combine - just keep working.


It all comes together and magically looks exactly like the inside of a Peanut Butter Cup.  Even the strange texture of the graham crackers is perfect.  Not too smooth, not too course.  Delicious.


Melting chocolate (white or milk) can be a bit tricky in the microwave.  Be sure not to over cook (or it will turn chalky).  I usually stop and stir every 30 seconds.  It will look like they are not melting (because they still hold their shape), but as soon as you stir the chips, they collapse into liquid.

If you feel more comfortable - the double boiler method is always an option.
 

Once the treats were cut into squares - they were packed into cute Halloween Tins.  


Plus a few were kept at home for us to snack on.
